A simple recipe for Jeera Aloo (Spiced Cumin Potatoes):
Ingredients:
4-5 medium-sized potatoes, boiled, peeled, and cubed
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
1-2 green chilies, finely chopped
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish
1-2 teaspoons lemon juice (optional)

Boil the Potatoes: Wash the potatoes thoroughly and boil them until they are just cooked. Do not overcook. Once done, peel the skin and cut them into medium-sized cubes.
Prepare the Spice Mix: In a small bowl, mix the turmeric powder, cumin powder, coriander powder, and red chili powder with a little water to make a paste.
Sauté Cumin Seeds and Green Chilies: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped green chilies and sauté for a few seconds.
Add Spice Paste: Add the spice paste (turmeric, cumin, coriander, and red chili mixture) to the pan. Sauté for 1-2 minutes until the oil starts to separate.
Add Potatoes: Add the boiled and cubed potatoes to the pan. Toss them gently to coat with the spices.
Seasoning: Add salt to taste. Mix well and let it cook for about 5-7 minutes on low heat, stirring occasionally.
Garnish:
Turn off the heat. Squeeze a bit of lemon juice over the potatoes and give it a gentle mix. Garnish with freshly chopped coriander leaves.
